Pasta with tomato sauce

Comment: a quick and easy recipe. You can also, of course, use 400 g of fresh tomatoes (seeded and peeled).


200 g spaghetti or penne
1 can of crushed tomatoes (400 g)
1 shallot
1 large clove of garlic
1 branch of oregano or 2 of thyme
a few basil leaves
50 g grated Parmigiano Reggiano
cayenne pepper (opt)


Cook the pasta for the time indicated; on the package.

Chop the shallot
Chop the garlic

Sweat the shallot in a little EVOO. Then add the garlic.
After 1 or 2 minutes add the tomatoes, 1 pinch of salt, pepper, oregano or thyme, a pinch of cayenne pepper (opt) and simmer (reduce) a little (~10 min).
Remove the branch, add the chopped basil leaves, mix and add the al-dente pasta.
Cook while stirring for a maximum of 1 minute, sprinkle with Parmigiano Reggiano, mix and serve.
