Goat cheese puff-pastry

Comment: A quick and easy appetizer that's a crowd-pleaser. You can customize the basic recipe by adding a few matchstick-cut bacon strips (lardons), a small slice of grilled prosciutto, a drizzle of honey, or a splash of olive oil.

Serves 4

Ingredients:

1 puff pastry
1 log of goat cheese
4 slices of Parma ham or a few matchstick-cut bacon strips (optional)
1 egg (for glazing)
Extra virgin olive oil (EVOO)
Salt & pepper

Preparation:
------------

Preheat the oven to 200°C (fan-assisted/convection).

Roll out the pastry to a thickness of about 3–4 mm.

Cut the pastry into 8 cm squares. Use a very sharp knife to avoid crushing the edges, which would prevent the pastry from rising properly.

Prick the center a few times with a fork to stop the middle from puffing up and lifting the cheese off the pastry.

Place a slice of cheese (over 1 cm thick) in the center of each pastry square, fold the corners upward to create some height, and brush with a 50/50 mixture of egg yolk and milk.

Bake for 10 to 20 minutes.

Meanwhile, crisp up the bacon strips or Parma ham, if using.

Serve warm (with a light drizzle of EVOO or a couple of turns of freshly ground pepper).
