Vinaigrette French salad dressing

Comment: vinaigrette, salad dressing, basic recipe. There are some variations, it's up to you. You can omit the garlic, for example, but try to avoid sugar, honey, ketchup, mayonnaise and soy sauce. Remember that mayonnaise is a sauce and not an ingredient.
This recipe was passed down to me from my parents and my only improvement is to use shallot rather than onion.
As for the mustard, use a good Dijon style mustard.

Ingredients:

4 servings [1/2 l]

1 small    [2 large] shallot, finely chopped
1 clove    [5 cloves] garlic, grated or finely chopped
3 tbsp     [165 g] wine vinegar (possibly flavored with tarragon)
5 tbsp     [270 g] EVOO
1 tsp      [1.5 tbsp] heaped mustard
1 pinch    [1 level tsp] of salt
5 T        [20+ T] pepper

Preparation:

Mix all the ingredients to emulsify well.
