Comment: I don't like sweet potatoes. However the idea of maple sirup and thyme seemed appealing. This was actually a game changer for me, this is an excellent dish which I have enjoyed every time I made it. This recipe is so great, there is nothing to change.
Larger potatoes will require up to 90 mn of cooking while smaller ones will be ready in 45 mn.
For conversions, a liter of maple syrup weighs 1.33 kg or 2.93 lbs.


6 servings as a side dish

Ingredients:

1.5 kg medium-sized sweet potatoes  
95 g butter                      
100 ml (125 g) pure maple syrup                
100 ml milk                        
1.5 teaspoons salt                    
1 tablespoon fresh thyme leaves      
Pepper


Preparation:
------------

Preheat the oven to 200C [400F]. Line a baking sheet with foil or parchment paper, prick each sweet potato 3-4 times with a fork. Place on baking sheet and bake until soft, 45 to 90 minutes.
Meanwhile, melt the butter in a saucepan. Add the maple syrup, milk, salt and pepper. Reserve.
When the sweet potatoes are cooked and cool enough to handle (using a towel), cut them in half and scoop the flesh out into the pan with the butter mixture. Over low heat, mash the potatoes with a potato masher until smooth. Stir in the thyme. Add a little extra milk if necessary and adjust the seasoning.
