Tomato sauce for Pizza

Ingredients: (for 2 large pizzas or 4 individual ones)

1 can peeled diced tomatoes 400 or 412 g with all the juice (1 whole 412 ml can)
make sure they are San Marzano, this really makes a difference!
1+ large bay leaf
1 small teaspoon each of dried thyme & oregano (optional)


In a pot put the tomatoes with all their juice, the bay leaf & herbs (if using), a good pinch of salt and a some pepper.
Simmer for 20 to 30 mn on low stirring a few times.
Mash with potato smasher half way through.

Let cool covered.
