Comment: a fresh and tasty salad for the warm days. The amount of mushrooms, once sliced may seem like a lot, but mushrooms will "cook" thanks to lemon juice and somewhat reduce in volume.
For 3 to 4 people
400 to 500 gr fresh mushrooms
2 teaspoons old-style mustard (with grains)
1 lemon juice
3+ tablespoons olive oil
2 small shallots, finely chopped
2 garlic cloves finely chopped
Parsley or chives
A few chopped basil leaves
A dash of tabasco (opt)
S + P
Slice the mushrooms in not too thin slices.
Place in a bowl.
Prepare the sauce in a bowl by mixing all the other ingredients.
An hour to an hour and a half before serving, pour the sauce over the mushrooms, mix well, and let rest in a cool place.
