These are my notes for the raita presented on the excellent website: Raita
2.5 dl liquid unsweetened plain yogurt
3 fresh scallions
2 fresh green chilies (jelopinoes)
1 thumb-sized ginger root
1 large garlic clove
juice of 1 lemon
black pepper corns
Peel the cucumber, cut in 2, then remove the seeds with a spoon.
Pour the yogurt into a bowl and coarsely grate the cucumber.
Purée ginger and garlic and mix in. Chop the chili and scallions and mix in, along with lemon juice.
Heat cumin seeds in a dry saucepan until they smoke, then reduce to a powder with the peppercorns and salt. Add to the raita.
(I used powder cumin, was OK).
