Comment: Making fries without a deep fryer. After several tries, I arrived at two satisfactory solutions. Of course, this does not replace real fries made in the deep fryer, but the result, close to English "chips" is adequate. Either blanch them for 3 minutes as explained below, or do not blanch them, but use enough oil to fry them on the baking sheet. Preferably use a frying oil (sunflower, peanuts, canola).
~250 g of potatoes per person
Preheat the oven to 240C.
Wash the potatoes, normally there is no need to peel them.
Cut them into large fries. Rinse them well.
Blanch tyhe fries in lightly salted water, start cold.
Boil for exactly 3 minutes.
Drain them well in a colander for a few minutes (without them drying out).
Place them on a baking sheet (on baking paper or a silicone mat). Sprinkle with paprika (opt), a small drizzle of EVOO, then in the oven for 30 to 40 minutes.
Place them without overlapping on a baking sheet (on baking paper or a silicone mat). Drizzle with oil (more than a little drizzle), then in the oven for 30 to 40 minutes.
Salt them out of the oven.
