Inspired from: Cucumber Salad with Mint
2 to 3 servings
1 large cucumber (or 2 small)
1 small red onion
mint or dill
white wine vinegar
Seed the cucumber and cut it in very thin slices (1 to 1.5 mm).
Place the cucumber with a few pinches of coarse salt in a colander.
Let drain for at least 60 minutes preferably longer, turning them every now and then.
Very finely slice the red onion (1 mm).
Dump the cucumber on a kitchen towel and pat the cucumber as dry as possible.
In a bowl, toss the cucumbers, onions, white wine vinegar, olive oil, pepper and a few schreded mint or dill leaves.
Cover and let stand in refrigerator ~30 minutes.
