Cuban Black Beans

Comment: ideal and quasi-mandatory side for Cuban style pork roast. The beans can be black or red.

4 to 6 servings
Ingredients:

2 cans black or red beans (each 15 oz, 400 g, drained 205 g).
1 small diced green pepper
1 diced onion
4 cloves garlic crushed
1 tablespoon red wine vinegar
1 teaspoon granulated sugar
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
2 bay leaves
EVOO
Preparation:

Sweat green pepper, onions, and garlic at medium-high heat for a few minutes with a pinch of salt.
Add canned beans with all the liquid, red wine vinegar, sugar, oregano, cumin, salt, pepper, and bay leaves.
Stir to combine and bring to a boil.
Reduce half covered on low heat for ~20 minutes until proper (creamy) consistency.
Taste and adjust seasonings, if needed.
