Israeli salad

Make as much as you want, this is great from breakfast to dinner either alone or as a side dish. Multiply the basic recipe for the desired quantity.

Basic ingredients:
- 1 English cucumbers (seeded) ~200g
- 2 large tomatoes (seeded  ~300g
- 1/2 red pepper  ~100g
- a few green onions (or 1 small red onion)

Optional ingredients - try adding them individually, or in any combination:
- 3 tbsp chopped fresh parsley (flat-leaf)
- 3 tbsp chopped fresh mint
- 1 clove grated garlic

- Fresh lemon juice of 1 whole lemon
- EVOO (1/3 as much as the lemon juice)
- Salt
- Pepper  
- Za'atar

- Finely chop all the vegetables (macedoine cut - cubes of 4 to 6 mm).
- Combine them in a large bowl, with any optional ingredients.
- Can be stored in the fridge for the day.

- Prepare the sauce with all other ingredients
- Right before serving, check there is not too much water released by the vegetables.
- Toss the salad with the sauce.
- Serve immediately.

Serve with some crumbled feta on top (opt.).
