Note: all quantities are indicated per serving.
1 egg pp
1 dl whole milk pp
15 g granulated sugar pp
1 vanilla pod for 5-6 people or vanilla extract
Pod: split the pod in 2 lengthwise, scrape the seeds, put in the milk (seeds and pod) .
In a small saucepan :
30 g+ granulated sugar pp
just enough water to wet
few drops of lemon juice (opt.)
cook over medium heat until brown.
Preheat oven to 150C = 300 F
Heat the milk without boiling with the vanilla, stir, let cool.
Beat together the eggs and sugar, then add slowly, while beating the vanilla milk.
Pass the mixture through a fine strainer.
Pour 2 to 3 mm caramel in the ramekins, then turn them around to coat the bottom.
Pour vanilla mixture nearly to the brim.
Put in a dish for bain marie, and add hot water to half height of the ramekins
Bake for 50 minutes, remove from bain marie, let cool, then refrigerate for 2 to 3 hours.
