Goat cheese puff-pastry

Comment: A quick and easy appetizer that everyone will love. To the basic recipe, you can add some diced bacon, a small slice of grilled prosciutto, a drizzle of honey, or a little olive oil.

Serves 4

Ingredients:

1 puff pastry
1 log of goat cheese
4 slices of Parma ham or some diced bacon (optional)
1 egg (for glazing)
EVOO
S + P

Preparation:
------------

Preheat the oven to 200°C (conventional oven).

Cut the pastry into squares slightly larger than the cheese slices. You will need 2 squares per person (per slice of cheese). Use a very sharp knife to cut the pastry so as not to crush the edges, which would prevent it from rising properly.

Make an opening slightly larger than the cheese slices in half of the squares. This can be done using a pastry cutter.

Seal the open squares to the closed squares with a little water (like a vol-au-vent).

Place a slice of cheese (~1 cm) in the center of each pastry, fold the corners upwards to create a little dimension, then brush with a 50/50 mixture of egg yolk and milk.

Bake for 10 to 15 minutes.

Meanwhile, fry the bacon or Parma ham, if using.

Serve hot (with a little extra virgin olive oil).
