Egg salad with mayonnaise

Comment: 1 to 1.5 eggs per person so recipe for 4 to 6 people. For sandwiches or aperitif.
The quantities [in brackets] are suitable for 15 to 18 people.
It is necessary to salt enough because the eggs are not salted.
To cook the hard-boiled eggs, place them in enough lightly salted water with a drop of vinegar, cold start.
Bring to a boil, boil 3 minutes, turn off the heat and leave to stand for 10 minutes. Pass under cold water or better still ice water to stop the cooking.


[6 eggs]     20 eggs coarsely chopped
[1 to 2]     5 to 7 chopped green onions
[45 g]       150 g mayonnaise
[1 heaped teaspoon] 1 heaped tablespoon Dijon
[25 ml]      80 ml lemon juice
[good pinch] 1 level teaspoon salt
[1 pinch]    3 pinches cayenne pepper


Mix everything well.
Serve chilled
