Ecrasé de pommes de terres
Literally "smash of potatoes".
500 g potatoes
2 garlic cloves
1 to 2 twigs thyme or 1 to 2 bay leaves

Peel and cut the potatoes in chunks of equal size.
Place in cold water with salt, the thyme or bay leaves, and the smashed garlic cloves.
Cook the potatoes and discard the water, thyme and garlic.
Roughly mash the potatoes with a fork or a potato masher - not too much, you want to leave some small chunks.
Add salt (if still needed), pepper, half of the chives finely chopped, some milk (~1 dl) and almost the same quantity of EVOO.
Mix well and serve topped with the remaining chive.
