Cuban-Style Roast Pork

Comment: This recipe uses orange and lime juice, but the original calls for bitter oranges (Seville oranges), which are difficult to find. If you have them, use 180 ml of juice instead of the orange and lime juices. For cooking the meat, I tried 71°C, which wasn't enough, then 76°C, which was barely enough, and finally 79°C, which was perfect.

Ingredients:

1.8 to 2 kg boneless pork shoulder roast
8 cloves garlic, minced or grated
2 tsp ground cumin
2 tsp freshly ground pepper
2 tsp salt
2 heaped tbsp chopped fresh oregano
1 handful chopped fresh cilantro
180 ml orange juice
120 ml lime juice
180 ml extra virgin olive oil
2 heaped tbsp roughly chopped fresh mint

For an optional sauce:

Preparation:

Mix all the marinade ingredients together. Marinate the meat, either in a plastic bag or in a bowl, ensuring it is well covered. Marinate for at least 24 hours (up to 48 hours) in a cool place, stirring occasionally.

Preheat the oven to 140°C (275°F).

Leave the meat at room temperature for at least 2 hours beforehand.
Separate the meat from the marinade and reserve the marinade.

Place the meat on a baking rack, wrapped in aluminum foil.
Fold the foil over the meat, leaving some space at the top, and place the meat thermometer on the side.

Cook for approximately 4 hours, or until the thermometer reads 79°C (154°F).

Remove the meat to a cutting board. Remove the thermometer.

Increase the oven temperature to 220°C (425°F).

Remove the foil (reserve it to cover the meat later), reserve the juices (from the baking rack and the foil), and return the meat to the rack.

Roast the meat for approximately 15 minutes. Remove it from the oven and let it rest for at least 15 minutes, covered with aluminum foil, before slicing.

Optionally, you can make a sauce with a few tablespoons of the marinade and the cooking juices (avoid too much fat). Reduce the mixture, then add chopped oregano and mint (S + P).
